Rumpelstiltskin's Contract Sour

Ingredients

• 2 oz coconut rum
• 0.75 oz fresh lemon juice
• 0.5 oz fig syrup
• 0.5 oz honey syrup
• 0.5 oz egg white or aquafaba
• 1 tsp black sesame bitters

Instructions

1. 1Combine all ingredients in a shaker without ice.
2. 2Dry shake for 15 seconds to emulsify the egg white — read the fine print before you sign.
3. 3Add ice and shake again hard for 12 seconds.
4. 4Double strain into a chilled coupe glass.
5. 5Garnish with three drops of black sesame bitters dragged into a spiral on the foam — the contract is sealed.
