The Palladium Sour

Ingredients

• 2 oz gin
• 0.75 oz fresh lemon juice
• 0.5 oz elderflower liqueur
• 0.5 oz blue butterfly pea syrup
• 1 tsp aquafaba (for foam)
• 2 dashes Peychaud's bitters

Instructions

1. 1Dry shake gin, lemon juice, elderflower liqueur, butterfly pea syrup, and aquafaba without ice for 20 seconds
2. 2Add ice and shake again for 15 seconds to chill
3. 3Double-strain into a chilled coupe glass
4. 4Add two dashes of Peychaud's bitters on the foam and use a toothpick to swirl a pattern
5. 5Garnish with a lemon peel twist resting on the foam
