Wisps & Whisky Sour

Ingredients

• 2 oz Scotch whisky
• 0.75 oz fresh lemon juice
• 0.5 oz honey syrup
• 0.5 oz elderflower cordial
• 0.5 oz egg white or aquafaba
• 1 tsp butterfly pea flower syrup

Instructions

1. 1Combine Scotch, lemon juice, honey syrup, elderflower cordial, and egg white in a shaker without ice.
2. 2Dry shake vigorously for 15 seconds to emulsify the white.
3. 3Add ice and shake again hard for 12 seconds.
4. 4Strain into a rocks glass over a large ice cube.
5. 5Drop butterfly pea flower syrup onto the foam surface in three small pools — blue wisps guiding the way.
