Ingredients:

2 oz gin
0.75 oz elderflower liqueur
0.5 oz fresh lemon juice
0.25 oz simple syrup
1 dash lavender bitters
1 egg white

Instructions:

1Combine all ingredients in a shaker without ice and dry shake for 15 seconds.
2Add ice and shake again vigorously for 10 seconds.
3Double strain into a chilled coupe glass.
4Allow the foam to settle and rise to a clean surface.
5Add bitters to the foam and garnish.
