Merovingian's Mousse

Ingredients

• 1.5 oz mezcal
• 0.75 oz Chambord
• 0.5 oz fresh lemon juice
• 0.5 oz black cherry syrup
• 1 egg white
• 2 dashes Angostura bitters

Instructions

1. 1Dry shake mezcal, Chambord, lemon juice, black cherry syrup, and egg white without ice for 15 seconds.
2. 2Add ice and shake again vigorously for 12 seconds.
3. 3Double-strain into a chilled coupe glass.
4. 4Dot the foam with Angostura bitters and drag a toothpick through to create a swirl.
5. 5Garnish with a single fresh cherry on a black cocktail skewer balanced across the rim.
