Darcy's London Blue

Ingredients

• 1.5 oz gin
• 0.5 oz butterfly pea flower syrup
• 0.75 oz fresh lemon juice
• 0.5 oz elderflower liqueur
• 3 oz tonic water
• Lemon wheel

Instructions

1. 1Combine gin, butterfly pea flower syrup, lemon juice, and elderflower liqueur in a shaker with ice
2. 2Shake for 12 seconds and strain into a highball glass over fresh ice
3. 3Top with tonic water and stir gently — as the citrus touches the blue it will shift purple
4. 4The color-changing effect is appropriately dramatic for Darcy
5. 5Hold the glass to the light to appreciate the blue-to-violet gradient
6. 6Garnish with a lemon wheel on the rim and a single edible blue violet flower
