Ego's Ratatouille Reduction

Ingredients

• 2 oz cognac
• 0.5 oz tomato water
• 0.5 oz red bell pepper shrub
• 0.25 oz fresh lemon juice
• 0.5 oz dry vermouth
• 2 dashes celery bitters

Instructions

1. 1Combine cognac, tomato water, red bell pepper shrub, lemon juice, dry vermouth, and celery bitters in a mixing glass.
2. 2Add ice and stir for 30 seconds until properly chilled and diluted.
3. 3Strain into a chilled Nick and Nora glass or small coupe.
4. 4Garnish with a paper-thin slice of heirloom tomato floating on the surface.
5. 5Serve with a single breadstick on the side — Ego approves of restraint.
