1.5 oz Cognac
0.75 oz Chambord
0.5 oz fresh lemon juice
0.25 oz simple syrup
1 oz dry sparkling wine
2 dashes Peychaud's bitters

Instructions

1Add Cognac, Chambord, lemon juice, and simple syrup to a shaker with ice.
2Shake hard for 15 seconds until well chilled.
3Double-strain into a chilled coupe glass.
4Gently float the sparkling wine on top.
5Dash Peychaud's bitters over the surface.
