Ingredients

• 2 oz Japanese whisky
• 0.75 oz yuzu juice
• 0.5 oz honey syrup
• 3 oz sparkling water
• 1 tsp matcha powder dissolved in 0.5 oz hot water
• 2 dashes Japanese citrus bitters

Instructions

1. 1Dissolve matcha powder in hot water and let cool completely.
2. 2Combine Japanese whisky, yuzu juice, honey syrup, and matcha solution in a shaker with ice.
3. 3Shake for 12 seconds until chilled.
4. 4Strain into a highball glass over fresh ice.
5. 5Top with sparkling water and add citrus bitters.
