Inspired by Hunt for the Wilderpeople

Ingredients

  • 2 oz bourbon
  • 0.75 oz fresh lemon juice
  • 0.5 oz manuka honey syrup
  • 3 oz ginger beer
  • 2 dashes aromatic bitters
  • 1 sprig fresh thyme

Instructions

  1. 1Muddle the thyme sprig gently in a shaker to release oils.
  2. 2Add bourbon, lemon juice, and manuka honey syrup with ice.
  3. 3Shake well for 12 seconds.
  4. 4Strain into a highball glass over fresh ice.
  5. 5Top with ginger beer and add two dashes of bitters.
