Ingredients

1.5 oz aged rum
0.75 oz elderflower liqueur
0.75 oz fresh lemon juice
0.5 oz blackcurrant syrup
1 egg white
2 dashes lavender bitters

Instructions

1Combine all ingredients in a shaker without ice and dry-shake for 15 seconds to emulsify the egg white.
2Add ice and shake again vigorously for 10 seconds.
3Double-strain into a chilled coupe glass.
4Allow the foam to settle and rise before garnishing.
5Serve immediately.
