The Sunken Place

Ingredients

• 1.5 oz mezcal
• 0.75 oz butterfly pea flower tea (cooled)
• 0.75 oz fresh lemon juice
• 0.5 oz honey syrup
• 0.5 oz lavender liqueur
• 1 oz sparkling water

Instructions

1. 1Combine mezcal, lemon juice, honey syrup, and lavender liqueur in a shaker with ice.
2. 2Shake for 10 seconds and strain into a tall glass over fresh ice.
3. 3Slowly pour the butterfly pea flower tea over the back of a spoon to create a dark layer on top.
4. 4Top with sparkling water and garnish with a lemon wheel and a dried lavender sprig.
