Ingredients

2 oz gin
0.5 oz absinthe
0.75 oz fresh lemon juice
0.5 oz simple syrup
1 egg white

Instructions

1Dry shake gin, absinthe, lemon juice, simple syrup, and egg white without ice.
2Add ice and shake again vigorously.
3Strain into a coupe glass.
4Let the foam settle into a flat white surface.
