2 oz absinthe
1 oz fresh lemon juice
0.5 oz simple syrup
1 oz sparkling water
1 egg white

Instructions

1Dry shake absinthe, lemon juice, simple syrup, and egg white for 15 seconds.
2Add ice and shake again for 15 seconds.
3Strain into a coupe glass.
4Top with a splash of sparkling water.
