Cornish Time Traveler

Ingredients

• 1.5 oz gin
• 1 oz elderflower liqueur
• 0.5 oz fresh lemon juice
• 0.5 oz honey syrup
• 2 oz tonic water
• 2 dashes lavender bitters

Instructions

1. 1Fill a chilled highball glass with fresh ice cubes
2. 2Pour gin, elderflower liqueur, lemon juice, and honey syrup over the ice
3. 3Stir gently from the bottom to combine without bruising the botanicals
4. 4Add lavender bitters and top with tonic water, pouring slowly down the side
5. 5The elderflower and lavender should give a soft countryside floral scent
6. 6Garnish with a lemon slice and a sprig of fresh thyme from the garden
